Leftover Salmon BLT with Mayo Dill Sauce

A great way to limit food waste and save money is to eat your leftovers the following day. Most of us tend to pop the ol' casserol dish into the microwave at lunch or dinner time. Pretty boring - plus, it never really tastes the same now, does it? It's probably the reason why most of us are not too excited about leftovers.


I want to change that. I set out to enliven my leftover salmon by turning it into my favourite sandwich - the BLT (sans the B).


The American Heart Association recommends eating at least two servings of fatty fish like Salmon every week. Leftovers are a great way to squeeze in that second serving. This leftover salmon BLT is quick and easy to make plus its loaded with omega-3, protein, vitamin B, and antioxidants. The creamy mayo dill sauce really turns this simple dish into a restaurant quality sandwich. See the recipe below!

Time: < 1hr



Ingredients:


- 2 slices of white bread (toasted)

- 1 4oz Salmon fillet (baked)

- 1 small tomato (sliced)

- Fresh baby spinach

- 1 tbsp mayonnaise

- 1 tsp lime juice

- 1/4 tsp fresh dill



Directions:


  1. Start by preparing the sauce. Combine mayo, lime juice, and fresh dill in a bowl and whisk until smooth. Set aside.

  2. Toast up the slices of bread and brush with some butter for extra flavour.

  3. Assemble your sandwich. Spread the mayo dill sauce on a slice of toasted bread. Add salmon, sliced tomato, then spinach. Top with the second slice of toast.

  4. Slice the sandwich in half and serve with a glass of your favourite orange juice.
