This is my go-to quick and easy garden salad that is so versatile it pairs well with almost any main dish that you can cook up. It is also fantastic on its own or topped with your choice of protein. I recommend salmon, steak, or grilled chicken.

Ingrediants:
- 4 cups of fresh spinach (chopped)
- 1 large tomato (chopped)
- 1 cucumber (chopped)
- 1 red bell pepper (chopped)
- 1/2 red onion (thinly sliced)
- 2 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- 1/2 lime (juiced)
- Salt (to taste)
Directions:
Chop the spinach, tomato, cucumber, and red bell pepper. Thinly slice the red onion.
Prepare the dressing by combining the olive oil, balsamic vinegar, and freshly squeezed lime juice in a seperate bowl. Whisk together until thickened.
Add dressing to the salad with a pinch of salt. Toss to combine. Transfer to serving bowl and enjoy.
