
These berry muffins are pillow- soft, light and airy with a slightly crunchy top.
Just Remember:
Don't overmix the batter. Mix dry & wet ingredients until just barely combined and you can no longer see the flour.
Line the pan with muffin cups.
Fill each muffin cup to only 1/2 to 3/4 of the way full.
Bake on the center rack of the oven
Don't overbake. Use a toothpick as tester. Bake only until tester comes out clean after inserting in center of the muffin. Begin checking after about 25 minutes.
After baking, remove from pan and cool each muffin on a cooling rack.

Ingredients:
- 1.5 cups of all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup of sugar
- 1 egg
- 1/3 cup of melted butter
- 100g vanilla flavoured yogurt cup
- 1/2 cup of milk
- 1 cup of fruit
Directions:
Combine dry ingredients: flour, baking powder, baking soda, salt, and sugar in a bowl
Whisk the egg with the melted butter, yogurt and milk in a seperate bowl. Then, combine dry and wet ingredients
Finish by stirring in a cup of your favourite fresh or frozen fruit medley
Bake at 175°C (350°F) for approximately 30 minutes
