Stracciatella Chocolate Cake



Is it coffee time yet? Dark roast, espresso, capuccino, latte - whatever your preference may be - it will pair decadently with this Stracciatella Chocolate Cake. This cake is moist, full of chocolate, and easy to prepare in less than 30 minutes. The best part? It can be enjoyed right away!



 

Servings: 20cm x 30cm baking dish

Time: <1hr

 

Ingredients:


- 4 eggs (room temperature)

- 2 cups of flour

- 3/4 cups granulated sugar

- 1 tsp vanilla extract

- 2 tsp baking powder

- 5 tbsp vegetable oil

- 1 tbsp butter (room temperature)

- 200 ml plain yogurt*

- 200 g grated dark chocolate*

- Icing sugar for dusting


* You may use plain or flavoured yogurt. For example, vanilla or chocolate.

* You may grate your dark chocolate or you may use chocolate chips.





Directions:


  1. Mix the butter and sugar with a mixer

  2. Add one egg at a time making sure each is well mixed before adding the next

  3. Stir in the remaining wet ingredients by hand

  4. Stir the flour with baking powder in a seperate bowl. Then, combine with wet ingredients and stir by hand

  5. At the end, add your chocolate and combine

  6. Transfer to a greased or lined bake at 175°C (350°F) for approximately 25-30 minutes

  7. Cool then dust with icing sugar
